Mommy's Sangrias


The weather here in Georgia has been more than nice these last few days. Even with slight overcast it has been warm with the best breeze ever. This type of weather makes me so anxious and excited for Spring. Since it has been so nice out my family and I have taken full advantage of it by spending more time outdoors and cooking on the grill. And what goes better with warm weather and grilled food than a nice glass of Sangria?!? Below is a great Sangria recipe with a guaranteed kick! I love it. Its not too sweet and has a really great flavor and the fruit is an added treat!

Mommy's Sangria


1 bottle of your favorite Sangria
1 1/2 cup of Dark Rum
1 cup of Peach Schnapps
1 can of sliced peaches with juice
1 can of fruit cocktail with juice
1 cup of sprite


In a large pitcher add both cans of fruit with the juice followed by the bottle of Sangria wine. Then add the remaining liquid ingredients and stir well. 


**Serve chilled or on ice

Pumpkin Pancakes


As you all can see Fall is probably my most favorite season.  I just love it. So as we are gearing towards then end of Fall and coming closer to Winter, I bring one more touch of Fall in these delicious Pumpkin Pancakes. These pancakes are very different from traditional pancakes and with the caramel and whip cream topping (my attempt at the IHOP version) there is no need for maple syrup. Chicken Tortilla Soup

I really do enjoy many kinds of soup, but one of my absolute favorites is Chicken Tortilla Soup. This love affair started many years ago when I orderd some for the first time at a place called Max and Erma's. Its so delicious...the cheese, the chicken, the kick!! Mmmmmmmm!! And I can honestly say I have never had some that taste so good at any other place besides Max and Erma's until now--------> IN MY OWN KITCHEN!!! Check out this recipe here...and the site allows you to select the number of servings you want then changes the measurements for you...but I just simply used one can of each required soup and a 26 ounce jar of salsa. DELICIOUS!

Welcome Fall

Fall is officially here and I am super excited! I love it all; the crisp air, changing leaves, fall fashions and SOUP! 
I love, love, love soup! Chunky soup, just broth, soup with noodles or rice-you name it I love it and with the weather finally breaking, what better time to search for a new soup recipe to warm up with. 

Lately, I've been considering a soup a little more on the savory side and also more filling, so I've opted for a Loaded Baked Potato Soup (without the bake)!! That's right! LOADED and although there are plenty of mouth watering potato soup recipes out there, here is one created all by little ol' me.
